The other day I was grocery shopping at my natural food store and while waiting in line at the cashier I heard the owner telling a customer about this so called fake tomato sauce recipe that you can use in your pasta or pizza instead of tomato sauce. It actually didn’t sound so great but today when I was in hurry to prepare lunch it just came back to mind and I’ve thought to give it a try. I was pretty impressed about the result, it tasted really good and it was ready in no time. I’m not so fond of cooked carrots myself but this sauce strangely enough doesn’t taste like carrots at all. Nobody in fact guessed what it was but they all loved it.
Next time I’m going to use it on my pizza topped with grilled vegetables, but until then I think I’m going to prepare it again for my pasta.

Pasta with fake tomato sauce

1 small white onion
1 big carrot finely grated, about one heaping cup
1/2 tsp. tamari sauce or light soy sauce
3 Tbsp. extra virgin olive oil
freshly minced parsley for topping
toasted sunflower seeds
10 oz. pasta of your choice*

Slice the onions thinly and saute them in a skillet with the oil until soft, about 10 minutes. Add the grated carrots and cook for other 5-8 minutes adding few spoons of water to keep the sauce moist. When ready pure the sauce in a hand blender and put it back in the skillet.
In the meantime cook the pasta as directed and before draining it save few spoons of its water. Add the pasta to the skillet and mix until well combined. Serve the pasta topped with sunflower seeds, parsley and if you like a swirl of olive oil.

*use brown rice pasta for gluten-free.

    Good morning Patty
    First of all let me say how nuch I enjoy your letter.
    On our 25th wedding anniversary, my wife informed me that after all that time she was a little tired of cooking, and that I was to start taking over the chore. It was meant in fun of course, but after thinking about it for a while, I decided to try my hand at it. To make a long story longer, I really enjoyed playing around with food to get different effects. I have a very large vegetable garden, and grow all of my own produce. We give a lot of it away, but there is such a quanty, that I have enough to freeze for the winter.
    Anyway, after some dismal failures, I began to improve, and got better and better at cooking. As of now, I do it all. I have learned many things, thanks to people like you who take the time and trouble to gather information and send it out to us. Take this latest recipe for “fake sauce”. It looks like a great idea, and I intend to try it this coming Sunday. I’m sure it will be good.
    My wife and I will be celebrating out 58th wedding anniversary this coming June, so I am searching for something different to prepare for her. She deserves it for putting up with me far all these years.

    Congratulations on your up and coming 58th wedding anniversary, I really wish you all the best. You sure need to prepare something special to celebrate this big event and I know you’ll find something appropriate for the occasion. If you need any suggestions, please feel free to ask.
    I have a garden too, a small one and I love it. Growing vegetables is very satisfying, not to speak about the taste of the vegetables and the quality of them with no pesticides, g.m.o. etc.
