Tofu with bell peppers and tomato sauce

It has been such a long time I didn’t make this dish that I almost forgot how good it was. I was craving tofu and I was thinking about Mapo Doufu with ground pork meat, tian mian jiang and dou ban jiang sauce (hoisin sauce), Chinese often mix their tofu with meat and this particular dish is outstanding but then I decided that I needed something lighter after the Holidays. Luckily this dish came to mind and in about 30 minutes it was piping hot and ready on our plates. Even my little one liked it, he kept saying how good this meat was and I didn’t contradict him but enjoyed watching him savoring the dish. Continue reading

Resolutions for new year and a healthy recipe

Hello everybody I hope your Christmas Holidays went well and I wish you a peaceful and joyous 2009. I started the beginning of this year with a list of resolutions as I think most of us do. The difficulty is to accomplish them or at least try to. I realized that there’s one subject that never changes in all these years and it is to have an healthy way of eating. In the last few years I started to buy organic and good quality ingredients, to buy local and if I can not try at least to buy fair trade products. I try not to eat too many sweets either and if I’m craving them I prefer to prepare my own. I think that eating healthy and good food is indispensable for living in harmony with your body and mind. Food is for me one of the pleasures of life and I think that if you don’t have particular health conditions you can almost eat everything if you don’t abuse it and if you choose good quality and simple ingredients and eating less processed food as possible. Baked Pasta with Squash and Spinach


After 3 days of turkey leftovers I couldn’t take it anymore I needed something vegetarian 100% and light. I actually didn’t know exactly what to prepare so I opened the refrigerator and found a piece of squash, spinach and some scallions. I decided then to prepare a baked pasta. It actually came out pretty good and well balanced in flavors: the sweetness from the squash and the earthy flavor from the spinach, the scallions just gave the ultimate touch. I combined the vegetables and pasta with a delicate vegetable bĂ©chamel sauce to add consistency to my dish. Continue reading

Fruit & Vegetables: healthy, local and organic


I know it has been a long time since I have posted on my blog but between work and the really hot weather I’ve been “out of order” for awhile, but I’m here again full of energy and ready to go.

Last month I read an interesting article published in the NYTimes: Salad Days for the Internet by Michelle Slatalla and I discovered that, like in Italy, more and more people in the States are trying to eat healthier, locally and organic. In the States it’s much more difficult to go direct to the farmer and get vegetables due to the long distances you have there. However, if you check the article you’ll see that it is possible to have your organic fruit and vegetables delivered at home. It also mentions a very useful website, Local Harvest for those who want to go directly to a single farmer instead. You only need to insert your zip code, check and see if there are some farms  near you. I’m so glad I found these links and when I go to the States to visit I’ll definitely keep them in mind.
